Pinni, the winter sweet

If there is one Amritsari dry fruit dish, it is pinni. Atta is roasted in ghee, then mixed with sugar, goond (edible gum) fried till it puffs, and a generous handful of chopped Regular Badam, kaju (cashew) and char magaz (melon seeds). Pinni is eaten with a glass of hot milk, usually before the January chill sets in.

Vaisakhi, Gurpurab and the langar spirit

Around the Golden Temple, Gurpurab and Vaisakhi bring thousands of visitors, and local families prepare sweets and dry fruit packets to hand out to guests. A dry fruit gift box is a thoughtful return gift for relatives who visit from abroad, as many NRI families do.

Dry cold, dry heat

Amritsar is dusty and hot in summer and quite cold in winter, with fog in December. Keep pinni and panjiri in steel boxes; nuts stay fresh for a long time in either season, as long as jars are sealed and kept away from the stove.

Where the parcel goes

An Amritsar order usually reaches you in 2–4 days by courier, weighed to the gram and sealed airtight. Tarn Taran, Batala, Ajnala and Gurdaspur are also on the route. Orders start at ₹1,000 and every order ships free. Payment is online only. The seeds collection is handy when you want melon and pumpkin seeds for the sweets.

Wagah, wedding bhoj and chaat. Visitors to Amritsar come for the Golden Temple and the Wagah border ceremony, and stay for the food. Local weddings serve a full Punjabi bhoj with dal makhani, paneer and kheer, and the dessert counters lean on chopped nuts. A small jar of Walnut Kernels Two Pieces is the usual winter companion to a cup of kahwa or masala chai in the old city. Amritsari warian are also fried with a few cashews in some homes. Pick weights by the batch you cook: 500 grams is enough for pinni, and a kilo suits a family wedding, and extra weight can wait for the next month.
