The Gwalior and Morena region is known for gajak, the sesame and jaggery slab that arrives with the cold. Extreme weather, careful storage

Few cities swing as hard as Gwalior. In May the afternoon heat is severe, so put cashew and pista in the fridge, while January fog is damp and chilly. The rule for both is a shut jar and a dry spoon.

Gwalior has many Marathi families from the Scindia past, and Ganesh Chaturthi is celebrated with modak, sometimes stuffed with chopped cashew. In the cold weeks, sweet dishes such as gajar halwa get a spoon of raisins and cashews at the end. A reasonably sized packet lasts a family through the whole season.
