Buying dry fruits online in Jaipur

Jaipur shares our state and a good deal of our table. Mawa kachori is filled with khoya, dry fruit and cardamom; ghevar in the Teej season is topped with slivered almond and pista; and a new bride’s sinjara usually carries dry fruit along with the ghevar and the bangles. Makar Sankranti means a day of kites on the rooftops and plates of til laddoo and gajak passed between neighbours. Rajasthani weddings, with their heavy exchange of mewa between the two families, keep the demand steady the rest of the year.

Storing dry fruits in Jaipur’s dry heat

Jaipur’s summer is hot and very dry. Nuts do not go soft here the way they do on the coast; instead the heat drives their oil to the surface and they go rancid. Walnuts and pista are the quickest to turn, and a kitchen shelf in May can be hot enough to do it in a few weeks. Keep them in the fridge from April until the rains, and store the rest in a closed steel dabba in the coolest room of the house.

Winter is the easy season, but the cold nights and warm days make condensation inside jars that go in and out of the fridge. Let a jar warm up before you open it.
