Walnut Whole is the unshelled nut; Two Pieces are halves, which look right on a plate; Four Pieces are quarters, which are the sensible thing to bake and grind with and cost less for the same kernel. Walnut goes bitter once it has been open a while, which is the whole argument for buying it weighed to order rather than pre-packed.
