Quick answer
To make makhana chaat for a party, roast about 150 g of large makhana in two spoons of ghee until crisp, then just before serving toss it with chopped onion, tomato, cucumber, roasted almonds, pumpkin seeds, chaat masala, lemon and green chutney. That serves twelve guests as a snack. Mixing at the last minute keeps the makhana crunchy.
What do you need for twelve guests?
Makhana is light, so the weights look small. 150 g of large makhana fills roughly ten cups once roasted, and a party serving is a little under a cup.
| Ingredient | For 12 guests | For 6 guests |
|---|---|---|
| Large makhana (phool makhana) | 150 g | 75 g |
| Ghee | 2 tbsp | 1 tbsp |
| Roasted almonds, roughly chopped | 60 g | 30 g |
| Pumpkin seeds | 40 g | 20 g |
| Onion, tomato, cucumber, finely chopped | 1 large each | 1 small each |
| Boiled kala chana or roasted peanuts, optional | 1 cup | Half cup |
| Pomegranate seeds | Half cup | A quarter cup |
| Chaat masala, red chilli, black salt | To taste | To taste |
| Lemon, green chutney, coriander | 1 lemon, 3 tbsp, a handful | Half, 1 to 2 tbsp, a little |
| Fine sev, to finish | 1 cup | Half cup |

How do you make makhana chaat in five minutes?
The roasting can be done hours ahead. The five minutes is the tossing.
- Roast: heat ghee in a wide kadhai on low heat, add the makhana and stir for 8 to 10 minutes until a piece crushes with a crisp snap between your fingers. Sprinkle a pinch of salt and turmeric, cool fully and store airtight.
- Chop: prepare the onion, tomato, cucumber and coriander, and keep them in separate bowls in the fridge.
- Toss: just before serving, put the makhana, almonds and pumpkin seeds in a big bowl. Add the vegetables, chana, pomegranate, chaat masala, chilli and black salt.
- Dress: squeeze lemon and drizzle green chutney, toss quickly with two spoons, and top with sev and coriander.
- Serve: immediately, in small paper cups or katoris.

How do you keep makhana chaat crunchy?
Makhana soaks up moisture fast. Once tomato juice, lemon and chutney touch it, you have about ten minutes before it softens. Three habits help at a party:
- Toss in batches of four servings rather than all twelve at once.
- Deseed the tomato and squeeze the cucumber dry.
- Keep a bowl of plain roasted makhana beside the chaat so people can top up their own cup.
What variations work for different crowds?
The base stays the same; the dressing changes with the guests. For children, skip the chilli and green chutney, add sweet tamarind chutney and a few kishmish, and serve in small cups. For an office party, add roasted kaju and a spoon of peri peri seasoning. For elders, use softer roasted makhana, leave out the sev and keep the onion fine. For a dahi version, spoon whisked curd over each cup and finish with roasted jeera and tamarind chutney. Each version takes the same 150 g of makhana for twelve, so one roast covers whichever crowd turns up.
Is makhana chaat a healthy Diwali snack?
It is lighter than most party snacks. Makhana is roasted rather than deep-fried, and the bowl carries vegetables, nuts and seeds. The Indian Food Composition Tables (IFCT 2017) from NIN list makhana as a low-fat seed, with most of its energy from starch and a modest amount of protein. The sev, ghee and salt still add up, so it is a better snack, not a diet food. For guests watching salt, keep the black salt and chaat masala light and put lemon on the side.

Which makhana should you buy for chaat?
Large, white, evenly popped makhana gives the best chaat. Small, broken or brownish pieces roast unevenly and turn chewy. Makhana is graded by size in suta; for chaat and guest bowls, larger grades of around 5 to 6 suta look and taste better, as our makhana suta grades post explains.

How much should you order for the festive season?
One party bowl for twelve takes 150 g. Most homes find that a 250 g pack covers a party plus a few evenings of roasted makhana with tea, and 500 g covers the whole Diwali week with guests. Unopened, makhana keeps three to four months in a cool, dry place; once opened, move it to an airtight jar.
Our orders start at ₹1,000 and every order ships free. A practical party basket clears it easily: 500 g makhana, 250 g roasted almonds, 250 g pumpkin seeds and 500 g kaju for the guest bowl. All makhana grades are in the makhana collection.

Questions people ask
Can I make makhana chaat without roasting the makhana?
Not well. Raw makhana is soft and slightly chewy, and it goes soggy as soon as the dressing touches it. Roasting gives the crunch the chaat depends on.
What is roasted makhana chaat?
It is makhana roasted crisp in ghee and tossed with vegetables, chaat masala, lemon and chutney. Some versions add curd and tamarind chutney like a dahi chaat.
How far ahead can I make it?
Roast the makhana up to three days ahead and keep it airtight. Mix the chaat only in the last few minutes before serving.
Is makhana chaat good for Navratri fasts?
It can be, if you leave out onion and use sendha namak instead of black salt and chaat masala. Many families make a vrat version with peanuts, cucumber and pomegranate.
