Quick answer
Our makhana sells at around at today's shop rate a kilo, in 250 g packs. The rate can change, so check today’s makhana and dry fruit prices in Lucknow before you order. To roast it at home, put the makhana in a heavy kadhai over a low flame and stir for 8–12 minutes, until a piece crushed between your fingers snaps cleanly.
In Lucknow, makhana turns up everywhere: in kheer, in phool makhane ki sabzi, in a bowl beside the evening chai, and on the plate during Navratri fasts. Here is how we would buy it, roast it and keep it.
What makhana costs, and why
Makhana is the popped seed of a water lily. Most of India’s supply comes from the ponds of north Bihar. Harvesting and popping are slow, hand-done jobs, which is why a kilo costs about as much as good cashews. It is also very light. A 250 g pack is a big bag, enough for several rounds of roasting in a normal household.
The bigger the pieces and the fewer broken ones, the higher the price. For roasting and snacking, large whole pieces are worth paying for. Our Makhana (Fox Nut) is the grade we would use for exactly that.
How to tell good makhana before you roast it
- Size. Large, round pieces roast evenly. A bag with lots of small or broken bits will scorch in places and stay chewy in others.
- Colour. White to creamy, with a few brown patches of husk. That is normal. A grey or yellow cast means age.
- The press test. Squeeze one between finger and thumb. Good makhana gives and then crumbles. If it squashes like foam and springs back, it has taken on moisture.
- Smell. Almost nothing. Anything musty means it has been stored damp, and roasting will not rescue it.
Plain roasted makhana
- Heat a heavy kadhai on the lowest flame. No oil.
- Add two cups of makhana and keep stirring. High heat browns the outside and leaves the middle soft.
- After about 8 minutes, take one out, let it cool for a few seconds, and crush it. If it snaps, it is done. If it bends, keep going.
- Tip it onto a plate to cool completely before storing.
This plain roast is also the first step if you want makhana for kheer that holds a little crunch.
Ghee makhana, and masala makhana
Ghee makhana: warm one teaspoon of ghee per cup of makhana on a low flame, add the makhana, and stir until every piece is lightly coated. Roast as above, then finish with a pinch of salt. Many Lucknow homes use sendha namak for this during Navratri. Some add a pinch of powdered elaichi and sugar instead, for a sweet version with tea.
Masala makhana: make ghee makhana first. Then take the kadhai off the heat and toss in the spices while the ghee is still warm, so they stick without burning. Freshly crushed Kali Mirch, a little red chilli, turmeric and chaat masala is the usual mix. Some people also add roasted kaju or roasted badam to make a namkeen-style mix for guests.
| Version | Fat per cup | Flame | Add seasoning | Keeps (airtight) |
|---|---|---|---|---|
| Plain | None | Low | Not needed | About 2 weeks |
| Ghee | 1 tsp | Low | Salt at the end | About a week |
| Masala | 1 tsp | Low, then off | Off the heat | About a week |
Storing makhana through a Lucknow monsoon
Makhana’s enemy is damp air. Lucknow’s humid months are when raw and roasted makhana both go soft fastest.
- Keep raw makhana in an airtight jar, not in the pack it came in once that is opened.
- Store roasted makhana only after it is completely cool. Warm makhana sweats in the jar and loses its crunch overnight.
- If a batch goes chewy, dry-roast it again for a few minutes. It comes back, provided it does not smell musty.
- Buy in 250 g packs rather than stocking up for the season.
Orders to Lucknow usually arrive in 3–5 days. Delivery is free on every order, and orders start at ₹1,000. The rest of the range is on our makhana shelf. If you are mixing in cashews, our guide to kaju grades explains which ones to buy.
Questions people ask
Why is my roasted makhana chewy?
It was either roasted on too high a flame or stored before it cooled. Roast it again on low heat for a few minutes and let it cool fully on a plate.
Do I need ghee to roast makhana?
No. Plain dry-roasted makhana is crisp on its own. Ghee just helps salt and spices stick.
Can I use makhana during Navratri fasting?
Many families in Lucknow and across north India do, usually roasted in ghee with sendha namak. Follow your own family’s fasting rules.
How much makhana is in a 250 g pack?
Quite a lot, because makhana is so light. It is a large bag, usually enough for several batches of roasted makhana.
