Quick answer
Makhan malai, called nimish in Lucknow, is milk and cream whipped into a light, cold foam, sweetened and scented with saffron and elaichi. It is sold in the old city only on winter mornings. It is finished with slivered pista, sometimes with badam and silver varq, and it melts almost as soon as it touches your tongue.
We sell the nuts, not the nimish. But the garnish is half of what makes it look like Lucknow, and the dish can be made at home in a winter kitchen. Here is how.
What makes makhan malai a winter dish
Nimish depends on cold. Traditionally, the milk is left out in the open on winter nights and whipped by hand in the early morning, when the air is coolest. The foam is spooned off as it rises, layer by layer. Vendors sell it through the morning, and by the time the day warms up it has started to collapse.
That is why it belongs to Lucknow’s winter and disappears when the weather turns. Other north Indian cities have their own versions under other names. Delhi calls it daulat ki chaat, and Varanasi has malaiyo. But in Lucknow it is nimish or makhan malai.
The garnish: pista first
The green on top is what people remember. There are three ways to get it:
- Pista Katran: pistachio cut into fine slivers. This is the classic look, and it sits on the foam without sinking.
- Pista Pishori: a small, bright green pistachio. Chop it or slice it thin for the most vivid colour on a white foam.
- Crushed pista kernels, if that is what you already have. They are a little duller in colour but taste the same.
Our guide to pista kernels, katran and pishori explains the difference in more detail.
Alongside the pista, many serve nimish with:
- Badam Katran, for a little bite.
- Powdered green elaichi, a pinch on top as well as in the foam.
- Saffron strands, silver varq and a sprinkle of khoya or boora sugar. We do not sell those.
A home approach to makhan malai
Home nimish will not be quite what the old-city vendors make, because they have the open night air and practised hands. But a good version is well within reach. For four to six small bowls:
- Chill the base overnight. Mix 500 ml of full-fat milk with 250 ml of fresh cream. Cover it and keep it in the fridge overnight. We suggest the fridge rather than leaving it outside, for food safety.
- Chill your tools. Put the bowl and whisk in the fridge or freezer for 20 minutes before you start.
- Whisk and skim. Whisk the cold mixture hard with a hand whisk or a milk frother. As foam rises, spoon it off into a chilled tray or bowl, and keep whisking. This takes patience, 15–20 minutes, and you will not turn all the milk to foam.
- Flavour between layers. Sprinkle powdered sugar, powdered elaichi and a little saffron milk over each layer of foam as you add it.
- Garnish and serve at once. Top with pista slivers and badam katran and serve straight away. It will not wait.
The leftover milk is not wasted. Use it for kheer or the morning chai.
How much pista you need
| Serving | Pista katran or pishori | Badam katran | Elaichi |
|---|---|---|---|
| 4–6 small bowls | about 10 g | about 10 g | 3–4 pods |
| A winter get-together, 15–20 bowls | about 30 g | about 25 g | 10 pods |
A 100 g pack of pista katran covers a whole winter of weekend nimish, with kheer and firni besides. Pista runs around at today's shop rate a kilo, but you are using grams, not kilos.
Buying the garnish in Lucknow
Check today’s dry fruit prices in Lucknow for current rates. Orders usually arrive in 3–5 days, so order before the cold weekend you are planning for. Delivery is free on every order, and orders start at ₹1,000. Everything green is on our pistachio shelf.
Keep slivered pista in an airtight jar, away from light. Once cut it loses its colour and freshness faster than whole kernels, so buy it for the season rather than for the year.
Questions people ask
Are nimish and makhan malai the same thing?
Yes. In Lucknow the same winter milk-foam dessert goes by both names. Delhi’s daulat ki chaat and Varanasi’s malaiyo are close relatives.
Can makhan malai be made in summer?
The foam depends on cold, so it is hard to make in warm weather. Even with a fridge, it sets up best on a cool day and must be eaten straight away.
Which pista gives the greenest garnish?
Pishori pista has the brightest green. Pista katran is the traditional slivered look and is easier to use.
Does makhan malai contain butter?
Despite the name, it is made by whipping milk and cream into foam, not by adding butter.
