How much badam does a Jaipur family get through?

The arithmetic is simple, and it decides whether you buy 250 g or a kilo.

  • Two adults soaking five badam each a day use roughly 300 g a month.
  • Add two children at four each and you are at about 500 g a month.
  • A batch of badam halwa for a family takes 250 g on its own.
  • Ghevar season around Teej and the Diwali sweets add another 250 to 500 g.

Almonds keep well, several months in a cool, closed jar, so a kilo at a time is reasonable for a family of four. Through a Jaipur summer, move them to the fridge. According to USDA FoodData Central, 100 g of almonds carries about 579 kcal, 21 g of protein and 12 g of fibre, so a handful a day is plenty. For any medical question, speak to your doctor.

How should badam be soaked and stored in Jaipur’s climate?

Soak five to eight almonds in a small bowl of water at night, and peel them in the morning; the skin slips off easily after eight hours. In a Jaipur summer, when the kitchen crosses 40 degrees, soak them in the fridge so the water does not turn sour overnight. Mamra is usually eaten with the skin on by many families, so check your own habit before peeling.

Storage matters more here than in coastal cities, because the dry heat pushes the oil in almonds towards rancidity. Keep a week’s supply in a small glass jar on the counter and the rest sealed in the fridge. Avoid the steel dabba near the gas stove where most kitchens keep it. Our note on storing dry fruits through a Rajasthan summer covers every item on the shelf, and in winter, from November to February, a cool cupboard is enough.

Which Jaipur sweets use the most dry fruit?

Jaipur’s kitchen leans on nuts more than most. Mawa kachori is stuffed with mawa, kaju, badam and pista; ghevar is finished with slivered badam and pista; churma laddoo in many homes carries chopped dry fruit. Our guide to mawa kachori and Jaipur’s nut-heavy sweets has the quantities for one batch.

The next question after badam is always kaju. Across the grades, kaju works out to at today's shop rate today. Our Regular Cashew, whole and a size smaller than Super, is the everyday choice for a Jaipur kitchen jar. The almond collection and the cashew pages show every grade.

Questions people ask

What is the kaju price in Jaipur today?

Today’s kaju rate across the grades is shown live above. The largest whole kernels are at the top of the range, and broken kaju for cooking at the bottom.

Why is Mamra badam so much more expensive than Californian?

Mamra is grown in much smaller quantities, mainly in Iran and Afghanistan, and has a higher oil content. Scarcity and demand from families who soak it daily keep the rate high.

Is there a kaju rate in Jaipur for broken pieces?

Yes. Broken kaju (tukda and faad) is the lowest grade by rate and is ideal for kaju katli, gravies and mawa kachori filling, where the shape does not matter.

How do I check badam quality before buying?

Look for even size, a clean brown skin without dark spots, a sweet smell and a crisp snap. A bitter almond in the pack or a stale smell means old stock.
