Quick answer
Ask anyone returning from a holiday what they brought back, and goa kaju is usually on the list, in a printed plastic pouch from a shop near the beach. The name carries real history and real trust. But it is a place name, not a grade, and it tells you less about the nut inside than you might think.
Why is Goa famous for kaju?
The cashew tree is not native to India. Portuguese traders brought it from Brazil to the Goan coast in the sixteenth century, and it took to the laterite soil and the coastal climate so well that it spread across the Konkan and down the western coast. For a long time it was planted as much to hold the soil as for the nut.
Over the centuries Goa built a cashew trade around it: small processing units that roasted, shelled and peeled the nuts by hand, and families who knew how to sort a good kernel from a poor one. When tourism arrived, every visitor wanted to take some home, and Goa kaju became a souvenir as much as a food.
What does feni have to do with it?
Quite a lot. The cashew nut grows attached to a fleshy, juicy fruit called the cashew apple. Elsewhere it was often left to rot, but in Goa it was crushed and its juice fermented and distilled into feni, the state’s own spirit, which carries a geographical indication. That gave every part of the tree a use, kept cashew central to village life, and made the connection between Goa and cashew part of the state’s identity rather than just its economy.
It is also why the name stuck so firmly. Few places in India are tied to one crop the way Goa is tied to cashew.
What does a Goa kaju label actually tell you?
Less than people assume. A few things are worth knowing:
- India processes far more cashew than it grows, and a large share of the raw nuts arriving at processing units across the country, Goa included, come from abroad, mainly West Africa.
- Goa’s own crop is small compared with the cashew sold under its name in tourist shops and online listings.
- Maharashtra, Kerala, Karnataka, Andhra Pradesh and Odisha all grow and process cashew of comparable quality.
- A place name on a pouch says nothing about the grade, the count, or how long ago the lot was packed.
None of that makes Goa cashew bad. It means the name is a starting point, not a check. A tired, yellowing kernel in a Goa pouch is still a tired kernel. We do not sell our kaju as Goa kaju; we sell it by grade, which is the thing you can actually verify.
How should you judge kaju, wherever it comes from?
| What to look at | Good sign | Warning sign |
|---|---|---|
| Grade or count | The seller can name it; kernels are even in size | Mixed sizes, many halves, no grade given |
| Colour | Pale ivory to light cream, even across the pack | Yellow, grey, brown spots or patches |
| Snap | Breaks cleanly with a crisp sound | Bends, or feels rubbery |
| Skin | Clean, no bits of the brown testa left | Brown flecks still clinging to the kernel |
| Smell and taste | Sweet, milky, clean finish | Stale oil, sour or bitter aftertaste |
The grade is the most useful of these. Whole kernels are sorted by how many make up a pound, and the lower the number, the bigger the nut. Our Jumbo and Super names sit on that scale, and the kaju grades guide shows exactly where.
What does good kaju cost today?
Across our grades, kaju works out to at today's shop rate today. Our Jumbo Cashew (Kaju), one of our two large whole grades and the kind people mean when they picture a holiday pouch of big white cashews, comes to at today's shop rate. Super Cashew, the other large whole grade, is at today's shop rate. Every grade is listed side by side on the kaju price page.
If you liked the roasted, salted cashew from a Goa shop, the same thing is on our nuts shelf as Kaju Roasted, with masala, peri peri and black pepper alongside. The difference roasting makes is explained in roasted versus raw nuts.
Can you get kaju this good without a trip to Goa?
Yes, and fresher than a pouch that sat in a beach shop through the monsoon. Each item is weighed and sealed on the day it is packed, we dispatch within three working days of the order, and most cities receive it two to six days after. Mumbai and Pune, the two cities that drive down to Goa most often, both have their own pages; the Pune page has the details. Our orders start at ₹1,000 and every order ships free.
Questions people ask
Is Goa kaju better than Kerala kaju?
Not as a rule. Both states process cashew of comparable quality. Grade, freshness and storage decide quality far more than the state name.
Why is cashew from Goa shops sometimes cheaper?
It is often a smaller or mixed grade, or a lot that has been on the shelf a while. Compare the same grade before comparing prices.
What is the brown skin on some cashews?
That is the testa, the thin inner skin. A well-peeled kernel has none left; a few flecks are harmless but show less careful processing.
How long can I keep a big pack of kaju?
A couple of months sealed and cool, longer in the fridge. Cashew turns flat before it turns bad, so buy what you will use in a month or two.
