Quick answer

Kharbuja beej in English is muskmelon seeds, sometimes just called melon seeds, and what you buy are the peeled kernels: small, slim and ivory-coloured. Their benefit is as a food: like other melon kernels they are rich in fat and protein, and Indian kitchens use them in thandai, sweets, salads and gravies.

They are one of the quieter things on our shelf. People who cook for festivals know them well; people who do not often confuse them with watermelon magaj. This is the short version of what we tell them.

What kharbuja beej are

Scoop out a muskmelon and the seeds come out in a wet cluster. Washed, dried and shelled, each seed gives a tiny kernel, narrower and thinner than a watermelon kernel. Those kernels are what we sell as Muskmelon Seeds (Kharbuja Beej).

Many families still dry the seeds from summer melons at home. It works, but shelling them one by one takes an afternoon for a small bowl, which is why most people buy them already peeled.

How muskmelon seeds taste

Mild, soft and faintly sweet, with a light nutty finish. Raw, they are tender rather than crunchy. A minute in a dry pan changes that: they puff slightly, turn pale gold and pick up a toasted taste that is much stronger than you would expect from something so small.

They do not overpower anything, which is exactly why they are used. They add body and a little richness without making a dish taste of nuts.

Kharbuja beej vs magaj: the difference

The two are often sold side by side, and the word magaj is used loosely for both. They are different seeds.

Muskmelon (kharbuja beej) Watermelon (magaj beej)
Shape Small, slim, pointed oval Larger, flatter, rounder oval
Colour Ivory to pale cream Cream to off-white
Taste Milder, softer, slightly sweet Fuller, more nutty
Texture Tender, almost melting when ground A little firmer
Typical use Thandai, sweets, salads, char magaz Thandai, laddoo, mukhwas, gravies, char magaz

In most recipes you can swap one for the other without anyone noticing. Char magaz, the traditional four-kernel blend, usually contains both. If a recipe asks for magaj specifically, our Watermelon Seeds (Magaj Beej) are the ones it means.

What is in muskmelon seeds

Published nutrition figures for muskmelon seed kernels vary quite a lot from source to source, so we would rather not print an exact table we cannot stand behind. What is consistent is the broad shape: like other melon and gourd kernels, they are mostly fat and protein, and they are dense in calories, well over 500 per 100 g.

In practice that means a spoonful is plenty. Used as an ingredient, a tablespoon here and there, they add richness without adding much to a dish. If you are following a diet for diabetes, a kidney condition, pregnancy or anything else, ask your doctor how seeds fit in.

How to use muskmelon seeds

  • Thandai. Ground with Regular Badam, saunf, black pepper and elaichi into a paste, then stirred into cold milk. They thicken the drink and soften the pepper.
  • Sweets. Scattered over barfi, kalakand, sheera or kheer, stirred into laddoo and panjiri, or pressed into chikki with sesame.
  • Salads and raita. Toasted and sprinkled on top, like you would use sunflower or pumpkin seeds. They add crunch without much taste of their own.
  • Gravies. Soaked for twenty minutes and ground with cashew or on their own to thicken a mild, creamy gravy.
  • Mukhwas. Roasted and mixed with saunf and dhana dal after a meal.

If you like several seeds together, our Five Seeds Mix is ready to use, and the rest of the seeds shelf is there for building your own. For thandai, the pista that goes on top is usually the slivered kind; the difference between the grades is in our pista guide.

Buying and storing kharbuja beej

Look for an even ivory colour and whole, unbroken kernels. Grey or yellow patches mean age. Smell the bag if you can: fresh kernels smell of almost nothing, while old ones smell sharp.

Because they are oily and small, muskmelon seeds go stale faster than whole nuts. Buy in 100 g or 250 g lots, keep them airtight, and move the jar to the fridge in hot weather.

Questions people ask

What is kharbuja beej called in English?

Muskmelon seeds, or simply melon seeds. The peeled form is sometimes labelled muskmelon seed kernels.

Are muskmelon seeds and watermelon seeds the same?

No. Muskmelon kernels are smaller, slimmer and milder, while watermelon kernels (magaj) are flatter and a little nuttier, though they can usually replace each other in recipes.

Do I need to roast muskmelon seeds before eating?

No, they can be eaten raw. A light roast in a dry pan gives them crunch and more flavour.

How long do muskmelon seeds keep?

A few months in an airtight jar in a cool place, longer in the fridge. Throw them out if they smell bitter.
